What kind of taste does 'NEXT Kalbi 2.1', which reproduces Kalbi with 100% vegetable protein, taste like? I actually bought it and tried it.

When I was looking for ingredients in the meat section of Costco, I found an item called ' NEXT Kalbi 2.1 '. The package said ``Meat made from vegetable protein (soybeans),'' so I actually bought it, grilled it, and tried it to see if I could really reproduce the taste of short ribs with substitute meat.

The first-ever rib-style soy meat (alternative meat) “NEXT Calbi 2.1” is now available at all Costco stores

NEXT Kalbi 2.1 was displayed where Costco's bacon etc. are lined up. The price is 1258 yen including tax.

I bought it and brought it home.

The package is labeled with

a vegan certification mark to indicate that it does not contain meat, seafood, eggs, dairy products, or honey.

The name is vegetable protein processed food. In addition to processed soybean products, raw materials include sugar, soy sauce, apple puree, apple pulp, pear juice, and amino acid liquid.

Calories are 226kcal per 100g.

Inside the package, there were two bags of NEXT Kalbi 2.1 of 200g each.

NEXT Kalbi 2.1 has flavor from the beginning.

The cooking procedure is as follows. First, arrange NEXT ribs 2.1 in a frying pan with oil and fry.

Flip and fry until browned on both sides.

I tried putting it on a plate.

When you cut it with a knife and look at the cross section, it looks like this. You can see that the fibrous material is folded to form a single piece of meat.

When you eat it, the moment you put it in your mouth, you can feel the taste of ``kalbi with plenty of sweet yakiniku sauce''. However, as the surface area that touches the tongue increases, the roughness of the surface creates a sense of discomfort, making you feel that it is different from meat. As a soybean processed food, it has a moist and heavy texture that would go well with richly seasoned rice, but when I think about it as short ribs, I find that the texture is too rough, the texture is too uniform, and the texture is too uniform. I'm concerned about the fact that the juice containing the umami-like flavor of meat doesn't seep out.

The name 'NEXT Kalbi 2.1' makes me feel disappointed when I imagine the taste of 'galbi made with real meat', but as a soybean processed food, it is quite high quality and has a yakiniku-like taste with rice. Excellent compatibility. Editorial staff who tried it said, ``Alternative meats made from soybeans can have a bean aroma, but NEXT Kalbi 2.1 eliminates the bean aroma considerably'' and ``It's thick and filling, so I don't like pork. It might taste more meaty if it was seasoned like ginger grilled meat,' and 'If it was cheaper than real meat, it would be an option, but at 1,258 yen for 400g, I don't think I'd buy it again.'
