'Pickled bonito bowl ', which is made by soaking a single-fished bonito in a special sauce, will appear in Nakau from September 30, 2021 (Thursday). It was Nakau's first bowl made with bonito, so I actually ate it to see what it tasted like.

Inside the store, the pickled bonito bowl that I was looking for was appealing.



This time, I ordered a pickled bonito bowl for takeout and brought it home. If you take it home, raw eggs, dashi soy sauce, and wasabi will come in a separate container.



The pickled bonito bowl has a two-tiered structure, with pickled bonito in the upper tier and vinegared rice and chopped paste in the lower tier.



The pickled bonito was topped with sesame and chopped green onions.



Transfer the pickled bonito on top of the vinegared rice to eat the pickled bonito bowl ...



Insert the egg. If you dent the center of the vinegared rice before breaking the egg, you can keep the egg in the center.



After that, sprinkle some soy sauce on it ...



Add wasabi and you're done.

When you eat a bite, the pickled bonito has a modest saltiness, and it is finished in a balance that you can enjoy umami and sweetness. In addition, the bonito has changed to a net-like texture by being soaked in the sauce, and it melts with the vinegared rice in the mouth. However, the pickled bonito bowl I ate this time had the vinegared rice cooled by the effect of the ice pack, so it is recommended to warm the vinegared rice before cooking.



After eating halfway, break the egg yolk and try to change the taste.



When you eat pickled bonito bowl with yolk, the flavor of egg and the umami of bonito go well together. As mentioned above, pickled bonito has a modest salty taste, so when mixed with eggs, the overall taste changes to a fairly mild taste.
