The package of soy milk mayo looks like this. The color of the inside is similar to mayonnaise.



The name is semi-solid dressing, and the raw materials used include edible vegetable oil, soy milk, brewed vinegar, kelp stock, and shiitake mushroom extract. I was curious about what's in the kelp soup stock and shiitake mushroom extract, so I asked the staff, and they answered, ``Since soy milk mayo doesn't use eggs, umami is added to reproduce the richness of eggs.'' 'Yes,' was the answer.

When I tried it, I found that it had less sourness and a stronger umami flavor than regular mayonnaise. I was wondering if I would be able to taste the flavor of soybeans if they used soymilk, but the taste is so close to mayonnaise that I wouldn't notice it unless I was told that it was made with soymilk. I felt that even people who don't like soy milk could use it in place of mayonnaise. It doesn't feel strange as if soy milk was forcibly replaced with another seasoning, and it seems like it can be used in a variety of dishes as a mayonnaise with a strong umami flavor.
