FABEX Kansai 2023,' we discovered a freezing machine called 'Kyonen' that rapidly freezes food by immersing it in liquid. Liquid cooling is also attracting attention as a cooling technology that surpasses air cooling and water cooling for PCs, but I was curious about what advantages it has for food, so I asked for details.

I found Technican's 'cryosleep' booth.



This is what “freezing” looks like. The exterior is silver and has a door that opens upwards.



This is what it looks like when you look inside from the top. The liquid is stirred with jabajaba, and the vacuum-packed ingredients are immersed in the liquid. According to the staff, this liquid is alcohol and is cooled to approximately -30 degrees Celsius.

I was shown frozen konnyaku jelly as an example of food that has been quickly frozen through cryosomation. The one on the left is jelly frozen in a regular freezer, and the one on the right is jelly frozen by cryosomation. In jelly frozen in a regular freezer, the ingredients are separated, but with cryosomation, the ingredients can be frozen while remaining uniform. According to the staff, cryosomation can freeze food in about 1/20th the time of a regular freezer, so food cells are less likely to be destroyed. This makes it possible to ``freeze raw meat without dripping'' or ``freeze freshly baked bread without losing its aroma or sweetness.''



Alcohol was also frozen at the booth. By using freezing, it is possible to preserve the taste of unpasteurized raw sake for a long time. For reference, when I asked about the price of frozen alcohol, I was told it was about 4 million yen.



The relatively small model was approximately 1,090,000 yen.



In addition to alcohol and meat, bread and cream puffs were on display as frozen examples.
