Butter is about 75kcal per 10g, most of which is high-calorie food consisting of fat, but new food scientists have developed a low-calorie butter-like spread in which 80% of the ingredients are water. This buttery spread is 25.2 kcal per tablespoon.

Spread of a quarter of the calories of real butter not using artificial stabilizers, emulsion , which is one of (emulsion) High-Internal Phase Emulsions using a technique called (high internal phase emulsion / HIPE) , Emulsified water, vegetable oil and milk fat. According to Alireza Abbaspourrad of Cornell University, where the research was conducted, although the technique of emulsification itself is not uncommon, it was possible to achieve a high water content of 80% by using HIPE.
Below is the newly developed spread.
The demand for low-calorie butter is growing in the United States, and this new development is considered to be one way to do this. “HIPE technology will provide a unique texture and functionality while maintaining a high moisture content, and should provide a healthy solution for consumers,” he leads. Said Michelle C. Lee.
According to researchers, it is possible to change the taste and functionality by adding milk or plant-based protein to this butter-like spread. Also, since water is a medium, it is possible to add nutrients, vitamins and flavors.
