With the slip pasted on the outer box, the main iron plate arrived at the editorial department. Because it is an unreleased product, it says “omoi frying pan” on the outer box.



When I opened the box, there was a big iron plate, instruction manual, and recipe book.



The main iron plate has an outer diameter of 29cm, an inner diameter of 28cm, and the total length including the handle is 36cm. For comparison, when you put 500ml plastic bottle tea, it looks like this size.



Large enough to fit in a large frying pan.



On the other hand, the main iron plate (left) is quite low at 3cm. Because it is flat, dishes with lots of soup such as pots may not be suitable.



The handle has holes for inserting fingers, making it easier to hold.

A process called “oil return” is performed. Warm the steel plate over medium heat and add 2 to 3 cups of oil.



Spread the oil so that it fits all over, and return the oil to another container such as an oil pot. It is said that the oil will become familiar with the iron due to the oil return, making it difficult for the dish to burn. It is recommended that the oil be returned every time before cooking.



After finishing the oil return, the black iron plate has a color like a 10-yen coin. When I touched the surface of the iron plate, I got a dirty metal smell. Therefore, I rubbed it again and tried to use it after returning oil again.



In order to compare this time's iron plate, I will compare it with the Teflon-processed

28cm peace frying frying pan that I usually use in the editorial department. The size is almost the same, but there must be a difference in ability. First, measure the temperature with the FLIR i3 infrared thermography, which can measure the temperature just by holding two objects and holding the object, and storing the image.

The maximum temperature of the main iron plate is 129 degrees Celsius, which is quite low. The heating speed is quite slow, and the heated part seems to be uneven.



On the other hand, the iron plate seems to be quite difficult to cool down, so it stays hot for a long time after extinguishing the fire. When you stop the fire after warming the two sufficiently, looking at the image below, the frying pan (front) processed with Teflon has cooled down to about 50 degrees after stopping the fire for a few minutes, but it is It can be seen that the iron plate is kept at a temperature close to 100 degrees.



Using the thick beef thighs, I will actually compare the grilled meat.

When the meat that was baked on the iron plate that was pulled up earlier was cut, the meat juice overflowed. Omoy iron plate seems to be able to bake the meat so as not to let the juice out.



When I ate it, the fire was fully cooked and the texture was soft and juicy.



On the other hand, when you cut the grilled meat in a teflon-coated frying pan, the cut surface is red and the meat juice does not overflow too much, despite being baked longer than the main iron plate.



When I ate it, I couldn't bite the meat and it was in a “burned” state that tastes like blood. This time, the strength of the fire was the same between the main iron plate and the teflon frying pan, but it seems difficult to pass the fire through the meat with the teflon frying pan.

If you use thick meat, the difference in the way of the fire will be noticeable. The cut meat for roast beef baked in a teflon frying pan has a solid baked surface, but the meat in the center is almost raw and the heat is not sufficiently transferred into the meat I understand this.



On the other hand, the roast beef sliced meat that has been baked on the main iron plate has a good pink color, and the fire goes through to the center. The cast iron heavy iron plate can bake the meat slowly and evenly, so you can make roast beef that is difficult to cook with ordinary frying pans that are easy to heat and cool.



Next, I will bake a sirloin for a large steak. It is very difficult to cook meat with a thickness of 2.5cm and a total size of 500g with two pieces in a frying pan at home.

After baking for about 6 minutes, extinguish the stove and use the remaining heat to pass the heat to the inside. Even after 5 minutes, the handle was too hot to hold with bare hands.



A 2.5cm thick sirloin baked for 6 minutes with medium heat and 5 minutes with residual heat was lit.



It is a sirloin purchased at a supermarket for about 250 yen per 100 grams, but it is baked with a juicy and plump texture like a steak that can be eaten at a specialty store, making it easy to bite. Rather, if you think about the power of the big iron plate, medium rares and rares that still have a little red may be eaten deliciously through fire. A steak of a level that cannot be reproduced with a teflon frying pan, the hands of the editorial staff who came to the tasting did not stop, and two sirloin steaks disappeared in no time.

Ingredients are 600g chicken, 1 onion, 1 sweet potato, pizza cheese, salmon cheese, gochujang and ketchup.

With a normal frying pan, it is difficult to manage the heat, and even if you make a cheese tacklebi, the cheese may burn, or conversely, it may quickly cool and solidify. However, the main iron plate holds the heat firmly, so you can enjoy the melted cheese.



If you use the iron plate, you can make side dishes for 3-4 adults. Since the residual heat remains for a long time, it can be warmed up with a normal stove and then brought to the table.
