I was shown around the certified Gibier factory, where I saw deer meat being made into hamburger steaks.

As the number of deer increases throughout Japan, deer meat is gaining attention as a edible meat. I was given the opportunity to tour the factory of Sanshoku Co., Ltd., which produces products using deer meat, so I took photos and videos of the entire process of how deer meat is made into hamburger steaks.

Wild deer cause damage by stripping the bark off trees cultivated for timber, halting their growth, and invading homes and fields to eat crops. The damage caused by deer to forestry is particularly serious, and according to a summary by the Forestry Agency , 62% of the total area of forest damage caused by birds and animals in Japan is caused by deer. For this reason, hunting support systems have been launched all over Japan to reduce the overpopulation of deer, and there is also a growing movement to capture deer for food.

In order to ensure that wild deer can be eaten safely and deliciously, Mie Prefecture has created the 'Mie Gibier Food System Hygiene and Quality Control Manual' regarding the capture, butchering, processing, and cooking of deer, and deer meat captured within Mie Prefecture that complies with the manual is certified as 'Mie Gibier.' Sanshoku Co., Ltd. is one of the businesses registered in the 'Mie Gibier Food System Registration System,' and processes deer meat in accordance with the strict hygiene and quality control manual. This time, we were shown the manufacturing process of Sanshoku Co., Ltd.'s ' Venison Hamburger Steak .'

The exterior of the Iga Ueno direct sales store looks like this.

There was a sticker at the entrance that read 'A store where you can buy Mie game meat.'

Inside, there are rows of food cases. The Iga Ueno Farm Shop primarily sells to businesses, but also sells to the general public on the second and fourth Saturdays and Sundays of every month, excluding the midyear and year-end gift-giving seasons.

Inside the store there was also a certificate showing that it was registered under the Mie Gibier Food System Registration Scheme.
We were allowed into the processing plant to see how venison is processed. This is the area used for beef and pork processing, and at the back is the wild game processing plant.

Go through the back door to the game meat processing plant.

Go through another door and enter the game processing room.

In the game processing room, there were a number of meat processing machines. This is a chopper that turns meat into mince.

This is a mixer that mixes minced meat with various ingredients.

The deer meat used to make hamburger steak looks like this. The red meat is deer meat and the white meat is pork fat.

In addition to venison, we also use milk, sautéed onions, and seasoned breadcrumbs.

Here's a close-up shot of deer meat. It's easy to see why deer meat is also known as 'maple leaf' (momiji). While game meat such as deer and wild boar has an animal-like smell, this deer meat has no animal-like smell at all. Mie Gibier is said to thoroughly drain the blood during the capture and butchering process, which means that the 'animal smell caused by insufficient blood draining' is suppressed.

So, let's start making hamburger steaks. First, I use a chopper to process the venison and pork fat into minced meat.

Put the meat into the chopper.

It comes out minced.

Place the minced meat back into the chopper.

By putting the meat through the chopper twice, they achieve the optimal texture.

Transfer the minced venison to a blender.

Milk is also added.

Add sauteed onions as well.

Then add in some seasoned breadcrumbs.

When you start the mixer, the ingredients mix together with great force.

Once blended, remove the meat from the blender.

Round into specified amounts.

He carefully measured each one, taking the correct amount in one go without making a single mistake.

The hamburger steak is being rolled into balls.

Place plastic wrap on top of the mold and place the rolled out filling on top.

Push it open tightly.

It was shaped like a hamburger.

Next, wrap it in plastic wrap.

Once wrapped in plastic wrap, place it on a cart and take it to the freezer and your work is done.

We were also shown how the finished hamburger steaks are packaged. This is the sticker that is placed on the front of the package.

Stick the sticker onto the packaging film.

Place the hamburger steak inside the film and close the lid to finish.
