I went to Sushimatsu Esaka, Matsuya's first Kansai branch, where sushi made to order is sent out on a two-stage high-speed lane.

Sushi Matsu is a Matsuya Foods sushi restaurant chain with 13 locations in the Kanto region, and the Esaka location is their 14th store, their first in Kansai. Considering that their first store opened in 2006, it seems like a fairly slow expansion into Kansai, but because Sushi Matsu was a latecomer as a sushi chain, it took them more than 10 years to gain recognition and know-how, and with the COVID-19 pandemic on top of that, the timing was right.
The location of 'Sushimatsu Esaka store' is here. It is within a 5-minute walk from Esaka Station on the Osaka Metro and Kita-Osaka Kyuko Railway.
From Exit 10 of Esaka Station, walk west and turn right in front of Matsunoya My Curry Shokudo Esaka branch .
You will then see Sushi Matsuesaka on your left.
When you enter the store, there is a self-service water and wet towels set out in front of you.
The restaurant has 15 tables (4-seater and 2-seater).
Infant seats are also available.
Nowadays, the standard method is to order using a tablet provided at each seat. For this reason, freshly made sushi is brought to you on a dedicated lane. The white part visible behind the tablet in the photo is the lower lane where sushi is brought, and you can receive freshly made sushi right at your seat.
As an example of how fast items can be sent through the lower lane, we had them send just plates down the lane.
Because it is designed to be spacious, for example, it is possible to send a whole lunch menu on a large tray. The photo shows a sample set that was made for us. However, since it is difficult to actually take out the tray, we were told that it is preferable to place the plates individually.

The Shinkansen train used can carry up to four plates. The video below shows how it actually works.
In addition to the Komachi, the Hayabusa is also in operation, and if there are passengers with children, the Shinkansen trains they are carrying are sometimes switched between the first and second trips.
To celebrate its first Kansai store opening, Sushi Matsu will be selling the 'Three Pieces of Bluefin Tuna' at a discounted price of 500 yen (excluding tax) from September 21st (Saturday) to 30th (Monday). From the left, they have 'Bluefin Tuna Premium Red Meat, Bluefin Tuna Medium Fatty, and Bluefin Tuna Ootoro.' Tuna is a popular item among customers, and Sushi Matsu is able to offer fresh ingredients at an affordable price because it purchases directly from wholesalers. As this is still only the first store in Kansai, the ingredients are purchased in Kanto and delivered the next day.
There are regular cash registers and self-checkouts available for payment.
A barcode is prepared for each seat, which you take to the register when paying. If you use a self-service register, you scan the barcode yourself.
Payment can be made by cash, credit card, QR payment, or electronic money.
Here is a list of available cashless payment methods. Most of the standard methods can be used except for PiTaPa.
The opening hours of Sushimatsu Esaka will be from 11:00 to 15:00 and 17:00 to 23:00 only for three days from the opening date, Saturday, September 21, 2024, to Monday, September 23. From Tuesday, September 24 onwards, the opening hours will be from 11:00 to 23:00, and there will be no closing days.
