When I tried it, I found that the crisp texture of the shrimp and the umami of the seafood went perfectly with the mentaiko mayo sauce. The flavor of the tartar sauce and the texture of the shredded cabbage were also good accents, creating a burger that retained the goodness of the shrimp cutlet burger while also allowing you to enjoy the taste of mentaiko.
