Humans and mammals have immunoglobulin G (IgG) as a type of immunoglobulin (antibody), but birds also have immunoglobulin Y (IgY), which is a similar antibody, in serum and egg yolk. This IgY also has the property of not causing allergies or immune reactions when injected into humans. Since chickens lay about 300 eggs a year, you can get a lot of IgY by using chickens.

Rodrigo Gallardo, a professor of poultry medicine at the Department of Veterinary Medicine at the University of California, Davis, who was involved in the research to produce antibodies to the new coronavirus in chickens, said, 'Letting chickens lay eggs with antibodies to the new coronavirus. The research team, Gallardo and colleagues, inoculated chickens with three vaccines based on the spike protein of the new coronavirus or the receptor-binding domain (the site that binds to the virus) in two doses. After 3 or 6 weeks of vaccination, antibodies present in chicken blood samples and egg yolks are measured. Later, the National Center for Biodefense and Infectious Diseases at George Mason University tested whether chicken-produced antibodies help prevent humans from becoming infected with the new coronavirus.

Antibodies that can be extracted from vaccinated and immunized chicken egg yolks and sera have both been found to correctly recognize SARS-CoV-2. Studies have also shown that antibodies in chicken serum were more effective in neutralizing the new coronavirus, because 'the amount of antibody in the blood is higher than in egg yolk.'
