Peach and nectarine melted with apricot tofu on the tart and tried fluffy & crispy & juicy Kirfebon 'peach and nectarine almond mousse tart'

From the project commemorating the 30th anniversary of the founding of the fruit tart specialty store “

Kilfebon ”, the “ Peach and Nectarine Almond Mousse Tart ” devised by the staff of the Kilfebon Yokohama store appeared for a limited time in August 2022. It was said that it was a tart that used plenty of almond tofu and seasonal peaches and nectarines that imaged Chinatown, so I actually tried it.

Arrive at Kilfevon.

I found 'peach and nectarine apricot kernel mousse tart' in the showcase where the tarts were lined up.

There was also an introduction panel on the showcase for 'Peach and Nectarine Almond Mousse Tart'. It is a tart devised by the Yokohama store, and it seems that the design is based on the image of Yokohama Minato Mirai's Ferris wheel '

Cosmo Clock 21 '.

Ordered 1 hole of 'peach and nectarine almond mousse tart' for takeout. It was said that the ice pack for take-out is one hour as a guideline.

The tart box taken out of the paper bag looks like this.

When you open the box, 'peach and nectarine almond mousse tart' appears.

The top of the tart is filled with fruits without gaps. The nectarine is a slightly dark yellow fruit with a red skin, and the whitish peach is lined up in a spiral shape.

Also, the edge of the tart is garnished with raspberries lightly covered with gold leaf, giving it a luxurious feel.

The diameter of the hole type was about 25cm by actual measurement.

I cut it up and moved it to a plate. There are 10 raspberries in the hall, so you can cut them into 10 equal parts.

The cross section looks like this. There is a layer of orange-flavored madeleine on the tart, and a thick layer of white almond mousse is layered on top. On top of that is a thin sponge cake with peaches and nectarines folded on top.

When I cut it into a bite size with a fork and lifted it up, the almond mousse was too plump and fell down immediately. When you actually eat it, first of all, there is a soft texture of almond tofu, followed by a crispy texture of tart, then when you bite it, the juiciness of peaches and nectarines pops, and it is quite possible to mix several textures. It was impressive. As for the taste, the flavor of almond tofu is strong, and the refreshing sweetness of peaches and the slightly fruity sweetness of nectarine spread out. In addition, the bittersweet acidity of the orange-flavored madeleine fills the aftertaste, giving it an elegant taste.

If you eat from the center, the raspberry on the edge will remain at the end. When I ate it at the last bite, in contrast to the refreshingly sweet peach and nectarine, the raspberry has a strong acidity, and the slightly addictive apricot kernel tofu flavor is combined with the sourness of the raspberry. It was on a plate.

`` Peach and nectarine almond mousse tart '' is 780 yen excluding tax for 1 piece and 7800 yen excluding tax for 1 hole (25 cm), and is scheduled to be sold only in August 2022.
